I just created a pool but my points are still at 0. Does the pool only accumulate stats from this date or does it sub in the current points of players on your roster the next day?

It depends how you set it up. I beleive there are different options.

Regardless, if you just entered it today, it will not be updated until tomorrow. Updates are usually around 1 am Pacific time every day.
